There were cooking demonstrations throughout the morning. Chef cutting up foie gras.
The chef chops up une belle truffe to add to a vinegarette that eventually was added on top of a fried foie gras ball.
The truffle, like many mushrooms, transforms its environment. In the picture above demonstrates how the truffle causes the vegetation around the tree's root system to die.
